Ingredients
  

  • 1 can 14.75 oz Alaskan pink salmon, drained
  • 1/2 cup breadcrumbs panko or regular
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Instructions
 

  • In a big bowl, mix the flaked Alaskan seafood, breadcrumbs, egg, mayonnaise, Dijon mustard, lemon juice, dill, salt, and pepper. Make sure everything is well mixed.
  • Shape the mix into patties that are 3-4 inches wide and 1/2 inch thick.
  • Heat a big skillet over medium-high heat. Add a tablespoon of oil or butter.
  • After cooking, put the cakes on a paper towel-lined plate to soak up extra oil.
