  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil

For the Rice Bowl:

  • 1 cup uncooked jasmine rice
  • 2 cups chicken broth
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Hot sauce

Instructions
 

  • Start by seasoning your chicken breasts with spices and herbs. Sear the chicken in a hot pan until it's golden and cooked. Or, bake it in the oven until it hits 165°F.
  • While the chicken cooks, get the rice ready. Rinse the rice well to remove starch. Use the right amount of water for fluffy, perfect rice.
  • Season the chicken with spices like garlic powder, paprika, and black pepper.
  • Sear the chicken in a hot pan with oil until it's golden and cooked, or bake it to 165°F.
  • Thoroughly rinse the rice to eliminate extra starch.
  • Follow the package instructions for the rice, using the right water ratio for fluffy grains.
  • Once the chicken and rice are done, mix them in a bowl. You now have a tasty easy chicken and rice bowl. It's ideal for meal prepping or a fast dinner.
