Ingredients

  • - 6 large egg yolks
  • - 3/4 cup granulated sugar
  • - 1 cup mascarpone cheese room temperature
  • - 1 1/2 cups heavy cream
  • - 2 cups brewed espresso cooled
  • - 3 tablespoons coffee liqueur optional
  • - 24-30 ladyfingers savoiardi
  • - 2 tablespoons unsweetened cocoa powder
  • - Dark chocolate shavings optional, for garnish

Instructions

- Prepare the Mascarpone Filling:

  • - In a heatproof bowl, whisk egg yolks and sugar over a double boiler until thick and pale (about 5 minutes).
  • - Remove from heat and let cool slightly.
  • - Whisk in mascarpone cheese until smooth and creamy.

- Whip the Cream:

  • - In a separate bowl, beat heavy cream until stiff peaks form.
  • - Gently fold the whipped cream into the mascarpone mixture until well combined.

- Soak the Ladyfingers:

  • - In a shallow dish, combine espresso and coffee liqueur (if using).
  • - Quickly dip each ladyfinger into the mixture, ensuring they absorb liquid but don’t become soggy.

- Assemble the Tiramisu:

  • - Arrange a layer of soaked ladyfingers in a baking dish.
  • - Spread half of the mascarpone filling over the ladyfingers.
  • - Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.

- Chill and Serve:

  • - Cover and refrigerate for at least 4 hours (or overnight for best results).
  • - Before serving, dust with cocoa powder and garnish with chocolate shavings if desired.
  • - Slice and enjoy!
